Cottage Cheese Protein Cookies

Ingredients
  

  • 1 cup low -fat cottage cheese
  • 1/2 cup rolled oats
  • 2 scoops (60g) vanilla protein powder
  • 1 large eg g
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sal t
  • 1/4 cup sugar -free semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Place cottage cheese, egg, almond butter, and vanilla extract in a blender and process until completely smooth.
  3. In a separate mixing bowl, combine oats, protein powder, baking powder, and salt.
  4. Stir the blended cottage cheese mixture into the dry ingredients until a thick batter forms.
  5. Fold in the chocolate chips.
  6. Scoop approximately 12 equal portions of dough onto the baking sheet, spacing them 2 inches apart.
  7. Bake for 15 minutes or until the edges are set and lightly browned.
  8. Cool the cookies on the pan for 10 minutes before transferring to a wire rack to ensure they set properly.
