Ingredients
  

  • 4 large egg s
  • 1/2 cup small curd cottage cheese
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh chives, minced (optional)

Method
 

  1. Whisk eggs, cottage cheese, salt, and pepper in a bowl. Keep the mixture slightly textured.
  2. Place a non-stick skillet over medium-low heat. Add butter and swirl to coat the surface.
  3. Pour the mixture into the skillet. Let it sit for 30 seconds until the edges set.
  4. Push the cooked eggs from the edges toward the center. This creates large, soft curds.
  5. Fold the eggs until they are set but moist. Residual heat will finish the cooking.
  6. Remove from heat immediately. Garnish with fresh chives and serve.
