- Whisk eggs, cottage cheese, salt, and pepper in a bowl. Keep the mixture slightly textured.
- Place a non-stick skillet over medium-low heat. Add butter and swirl to coat the surface.
- Pour the mixture into the skillet. Let it sit for 30 seconds until the edges set.
- Push the cooked eggs from the edges toward the center. This creates large, soft curds.
- Fold the eggs until they are set but moist. Residual heat will finish the cooking.
- Remove from heat immediately. Garnish with fresh chives and serve.
