Ground Turkey Sweet Potato Bake

Ingredients
  

  • 1 pound lean ground turkey
  • 2 large sweet potatoes, peeled and cut into 0.5-inch cubes
  • 1 medium yellow onion, diced
  • 1 large bell pepper, diced
  • 2 cloves garlic , minced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped

Method
 

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Toss sweet potato cubes with 1 tablespoon olive oil and a pinch of salt and pepper on a rimmed baking sheet.
  3. Roast sweet potatoes for 20 minutes until they begin to soften.
  4. While potatoes roast, brown ground turkey in a large skillet over medium-high heat until no longer pink.
  5. Add remaining olive oil, onion, and bell pepper to the skillet and cook for 5 minutes until vegetables soften.
  6. Stir in garlic, smoked paprika, oregano, salt, and pepper and cook for 1 minute until fragrant.
  7. Combine roasted sweet potatoes and turkey mixture in a 2-quart baking dish.
  8. Top with shredded cheddar cheese.
  9. Bake for 15 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley and serve immediately.
