Sausage and Veggies Skillet

Ingredients
  

  • 14 oz smoked sausage, sliced into 1/2-inch rounds
  • 1 red bell pepper, seeded and chopped into 1-inch pieces
  • 1 green bell pepper, seeded and chopped into 1-inch pieces
  • 1 medium zucchini , sliced into half-moons
  • 0.5 medium yellow onion, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Heat olive oil in a 12-inch heavy-bottomed skillet over medium-high heat.
  2. Add the sausage rounds to the skillet in a single layer; sear for 3 minutes per side until browned, then remove to a side plate.
  3. Add the diced onion and bell peppers to the residual fat in the skillet; sauté for 5 minutes, stirring occasionally, until vegetables are tender-crisp.
  4. Incorporate the zucchini slices and continue cooking for 4 minutes until the zucchini begins to soften.
  5. Add the minced garlic, dried oregano, and red pepper flakes; sauté for 60 seconds until aromatic.
  6. Return the browned sausage to the skillet and toss to combine all ingredients; heat through for 2 minutes.
  7. Season with salt and black pepper to taste; garnish with fresh parsley and serve immediately.
