Thai Peanut Chicken

Ingredients
  

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1/2 cup creamy peanut butter
  • 1/2 cup coconut milk, unsweetened
  • 2 tablespoons soy sauce
  • 1 tablespoon hone y
  • 1 tablespoon lime juice
  • 1 tablespoon red curry paste
  • 2 cloves garlic , minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1/4 cup crushed peanuts
  • 1/4 cup fresh cilantro, chopped

Method
 

  1. In a medium bowl, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, and red curry paste until smooth.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat.
  3. Add chicken cubes and stir-fry until browned and cooked through, approximately 5 to 7 minutes.
  4. Incorporate minced garlic, grated ginger, and sliced red bell pepper; sauté for 2 minutes until vegetables soften slightly.
  5. Pour the prepared peanut sauce over the mixture and reduce heat to low.
  6. Simmer for 3 to 5 minutes, stirring occasionally, until the sauce thickens and coats the chicken.
  7. Garnish with crushed peanuts and fresh cilantro before serving.
